Breweries and beverage plants need two things from heat transfer: a wort cooler that pulls the boil down to pitching temperature in one pass, and enough cold water to feed it.
Wort cooling. A sanitary plate exchanger against cold liquor, often in two stages with a glycol trim. The closer the approach, the less glycol you need and the smaller the refrigeration load.
Cold liquor is the constraint. A wort cooler is only as good as the water feeding it. Where liquor tank temperature is the limiting factor, a falling film chiller making near-freezing water directly is what fixes it.
Beyond wort. Juice and soft drink pasteurizing, syrup heating and cooling, carbonation water chilling and CIP heating all use the same equipment family, and pulpy juice is exactly what the Free-Flow plate exists for.
On the volume you need to transfer and the time you have to do it, together with the cold liquor temperature available. Brew length divided by target transfer time gives the flow rate, and everything follows from there.
Almost always cold liquor temperature rather than the exchanger. Check liquor tank temperature at the end of a transfer before assuming the cooler is at fault.
Only if cold liquor alone cannot reach pitching temperature, which depends on your water temperature and the season. Two-stage cooling with a small glycol trim is common and uses far less refrigeration than glycol alone.
