Sauces, Purees, Oils and Prepared Foods

Food processing spans sauces and purees, edible oils, starches and sweeteners, prepared meals, protein solutions and plant-based products. What they share is difficulty: high viscosity, particulates and a strong tendency to burn on.

Free-Flow for solids. Anything carrying pulp, fibre, seeds or inclusions needs the open channel. A conventional plate pack will bridge and block, sometimes on the first run.

Hydrocooling for whole product. Where the product cannot go through an exchanger at all, a Temp-Plate bank floods it with chilled water instead, and the plates lift out for cleaning.

Surface temperature discipline. Using a cooler medium with more surface is almost always the right answer on food duty. It costs exchanger and saves cleaning downtime, and downtime is the expensive item.

Common FAQs

Move to the Free-Flow plate, which has a much more open channel and passes particles to around 3/8 inch. If the solids are heavier still, a Temp-Plate bank with removable plates is the next step.

Hydrocooling in a Temp-Plate bank. The product is flooded with chilled water kept cold by the plates, so it never contacts a heat transfer surface it could foul.

Surface temperature. Product against a wall well above its bulk temperature scorches and adheres, and the deposit insulates so the wall runs hotter still. A cooler medium with more surface breaks that cycle.

That is one of the strongest arguments for a gasketed frame. It opens completely, so every plate can be inspected and the changeover documented rather than assumed.
